Rajma Pulav / Kidney beans Pulav
Ingredients
🔸️Rajma - 3/4 cup
🔸️Basmati Rice - 1 ½ Cup
🔸️Onion - 1 Medium size
🔸️Green Chili - 2
🔸️Ginger garlic paste - 1 Tsp
🔸️Tomato - 1 Medium size
🔸️Cumin seeds - 1 Tsp
🔸️Bayleaf - 2
🔸️Cloves - 5
🔸️Cardamom - 2
🔸️Black pepper - 3
🔸️Fennel seeds - 1 Tsp
🔸️Turmeric powder - 1/4 Tsp
🔸️Coriander powder - 1.5 Tsp
🔸️Cumin powder – ½ Tsp
🔸️Red Chili powder - 1 Tsp
🔸️Garam masala powder - ½ Tsp
🔸️Salt - According to taste
🔸️Water – 1.5 Cup
Recipe
🔸️Wash & Soak 3/4 cup of Rajma overnight. I like to add more Rajma to my pulao.
🔸️Pressure cook the soaked Rajma for 5 whistles by adding salt
🔸️Drain the Rajma and store the broth
🔸️ in the same cooker, heat and add 3 tbs of oil
🔸️ Add 2 green cardamom pods, 1 black cardamom pod, 2 bay leaf, 3 star anise, 1 tsp of fennel seeds, 1tsp of Shahi jeera, 3 whole black pepper corns. Give a good fry
🔸️ Add finely chopped 1 medium sized onion. Sauté till they turn translucent
🔸️ Add 2 slit green chillies, 1 tbs of ginger garlic paste and fry till the raw smell dissipates
🔸️Now add 1 cubed medium sized tomatoes (ensure they are not finely chopped)
🔸️Add 1 tsp of red chilli powder, 1/4 tsp of turmeric powder, 1.5 tsp of coriander powder,
1/2 tsp of cumin powder & sauté till tomatoes turn mushy
🔸️ Add cooked Rajma, salt as per needed, and sauté for a min
🔸️ Add soaked (1 hour) 1 cup of Basmati Rice and gently stir
🔸️ Now add 1.5 cup of Rajma broth and pressure cook for 2 whistles and let it cool down
🔸️Serve hot and enjoy with Raita
