Ingredients
🔸️2 tbsp oil
🔸️1 Cup basmati rice
🔸️½ Chopped onion
🔸️1 Chopped tomato
🔸️½ Chopped capsicum
🔸️2 Tbsp chopped carrot
🔸️2 tbsp corn
🔸️2 tbsp peas
🔸️3 clove chopped garlic
🔸️2 cup water
🔸️1 tsp pepper
🔸️½ tsp salt
🔸️2 tbsp chopped coriander
Instructions
🔸️Take 2 tbsp olive oil and roast 1 cup basmati rice.
🔸️roast on low flame or till rice turns golden brown.
🔸️Now add onion, tomato, capsicum, carrot, corn, peas and garlic.
🔸️Saute for 2-3mins.
🔸️Then add water, pepper, salt, mix well and bring to boil.
🔸️Now cover and simmer till rice is cooked.
🔸️Turn off the flame, rest for 5 mins before serving.
🔸️Mexican rice recipe is ready to serve with lemon and coriander.
