Ingredients
🔸️1 tbsp Oil
🔸️1 Onion
🔸️2 garlic cloves minced
🔸️1/2 inch Ginger minced
🔸️1 tsp Curry Powder
🔸️1 tsp Turmeric
🔸️150 ml Coconut Milk
🔸️Coriander
🔸️1/2 Lime juiced
🔸️1 ripe & firm Mango peeled and diced
🔸️50 g Cashew Nuts
🔸️Salt to taste
Instructions
🔸️Heat up the oil in a large pan and add the onion, garlic and ginger and saute until softened.
🔸️Add the curry powder, turmeric, coconut milk, coriander, lime juice, mango, salt with water and mix well.
🔸️Bring to boil and cook on low heat for around 5-10 minutes.
🔸️Serve hot with rice. Enjoy!
