Kesar Basundi is a sweet and delicious traditional Indian sweet that is typically offered at family events and festivities.
Ingredients
🔸️1-litre high fat milk
🔸️200 g or 1 cup Sugar
🔸️2 tsp cardamom powder
🔸️10-12 Saffron strands
🔸️Sliced Almonds to garnish
Method
🔸️Heat high-fat milk in a heavy-bottomed saucepan over medium heat.
🔸️ Bring it to a boil, then lower the heat to medium-low and stir every 5 minutes.
🔸️Lower the heat and continue to cook the milk until it is down to half its original volume.
🔸️ Meanwhile, in a small bowl, add saffron threads. 2 tbsp heated milk in the saffron strands to infuse the colour and scent of the saffron.
🔸️ When the milk begins to reduce, add sugar to it. Stir it gently so that the sugar dissolves in the milk.
🔸️ Stir in the cardamom powder and the saffron strands for another 2-3 minutes.
🔸️ Turn off the heat and place the Kesar Basundi in a bowl to cool to room temperature.
🔸️Refrigerate for 2 hours after garnishing with almond pieces.
🔸️ Serve it chilled.
